Plain Griddle Cakes (as it was originally titled)
but now with nutmeg, vanilla, and blueberries
sift:
one cup flour
2 teaspoons baking powder
one-quarter teaspoon salt
add:
some vanilla, maybe about half a teaspoon
grated nutmeg
beat and add:
one egg (optional)
add:
1 cup milk (scant) stir gradually to make smooth
add: 1 teaspoon melted butter or oil
cook in a hot frying pan, flip pancakes when they bubble, to brown the other side.
Serve with Vermont maple syrup.
where this recipe came from
First I went to thewaybackmachine.com and searched for thedailychannel.com. When I found it I went to one of the snapshots from 2002, when the site had the orange pages. I think that was before the title was changed to “pancake recipe from scratch”, which routinely got tens of thousands of unique visitors on pancake day, a holiday celebrated worldwide in English-speaking countries.
Then I edited the recipe to include this morning’s additions of vanilla and grated nutmeg.
This basic recipe, without nutmeg and vanilla (which can – and should – be added to any pancake recipe) was first published in The Settlement Cookbook: ‘the way to a man’s heart’
How to insert an image into a Quarto Pub document
In R Studio, pick the “Insert” dropdown, choose ‘Figure/Image’, and browse to where the image is located. Select it. Voila!

update BBEdit
Go into the wayback machine to get the recipe
make a folder in your Quarto called pancakes
put index.qmd in there, and edit it
update the recipe
Bring in some photos from
scanus.com circa 1997
thedailychannel.com circa 1998
last year in the kitchen
today during the cooking of the pancakes
- wait, isn’t this an infinite loop?
Find the nutmeg grater
double check to make sure there is syrup
- this is actually step 1
try to put the images into Quarto
How not to insert an image into an R Quarto Pub document
(this is what I actually did)
First, when you see the BBedit icon bouncing and offering an update, do the update. Open the Index.qmd file. Meanwhile, go back to this document in Rstudio. Enter what you think is the image markdown shortcut. Notice that the image does not appear. Just [Caption](pancakeimage.jpg). What is going on?
Go through this iteration several times, including searchin’ on the ’net for markdown image format.
But THEN, go back to the BBEdit document and find this:
\[Caption\](pancakeimage.jpg)
That’s right, SOMEhow, RStudio’s “Use Visual Editor” option has guessed that you want to write the right and left brackets, and has, this time anyway, not reinterpreted for you.
Take out the backslashes using BBEdit, render the page, and voila! Pancakes!
slice blueberries in half and place, cut side down, on top of pancakes.
So maybe this recipe should be called “blueberry pancake recipe from scratch”.
I used oat flour, by the way.
